I wanted to create a quick and easy muffins recipe that was sweet enough to feel like a treat but ‘breakfasty’ enough to enjoy with a hardboiled egg for a quick breakfast. These are just the thing! By substituting the usual vegetable oil with unsweetened applesauce and a little bit of all natural butter, they are still moist on the inside with a little crunch to the outside. You will need:
- 1 medium apple, peeled, cored, and chopped
- 1 large egg
- 2 tablespoons of unsalted butter, melted
- 1/4 cup of lowfat milk
- 1/4 cup of fat free plain Greek yogurt
- 1/2 cup of brown sugar
- 1 tsp of vanilla extract
- 1&1/4 cups of all purpose flour
- 1&1/2 cups quick oats
- 1&1/2 teaspoons of cinnamon
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 tablespoon of chia seeds (optional)
Preheat the oven to 400 degrees. Line cupcake pan with cupcake liners.
In a bowl mix together egg, butter, milk, yogurt, brown sugar, and vanilla. Add four, oats, baking powder, baking soda, and salt and mix. Fold in apple pieces and chia seeds.
Divide evenly into 12 cups and bake for 10-12 minutes until golden brown and toothpick inserted comes out clean.
