Banana Chocolate Chip Baked Oat Muffins

These are really easy and make a great breakfast, snack or sweet treat. The best thing about them is that there is no added sugar, all of the sweetness comes from the bananas and chocolate chips.


  • 3 ripe bananas, mashed
  • 1 large egg
  • 1/2 cup of milk (I used 2%) 
  • 1 tsp vanilla extract
  • 1 3/4 cups of instant oats
  • 1/4 cup baking mix (like Bisquick or Trader Joe’s multigrain pancake and baking mix)
  • Pinch of salt
  • 1/4 cup of mini chocolate chips

Preheat oven to 350 degrees. Line muffin cups with muffin liners or spray with nonstick spray. 

In a mixing bowl, whisk together mashed banana, egg, milk and vanilla. Add oats, baking mix and salt and fold until well incorporated. Fold in chocolate chips.

Divide mixture between 10 muffin cups, filling nearly to the top (they don’t rise much). 

Bake for 20-22 minutes, allow to cool before eating. If you’re going to make a batch for yourself over several days, store in the fridge in an airtight container.
