Cheesy Baked Eggs

Cheesy Baked Eggs – the perfect comfort food full of protein, fiber and flavor!

Baked eggs are really easy, contain a great amount of protein and make an awesome breakfast, weekend brunch or brinner! The best bit is that they are so very easy to make, just some sauted veggies, chickpeas, tomato sauce, seasonings, eggs and cheese. That’s it!

Ingredients |

  • 2 teaspoons of olive oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • 1 15.5 oz. chickpeas (or any white bean) drained, well rinsed, and dried
  • 1 cup of tomato sauce (my favorite is Miur Glen Chunky Tomato Sauce)
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 2 teaspoons of smoked paprika
  • 1/4 teaspoon of salt (or more to taste preference)
  • Pinch or two of black pepper
  • 4 eggs
  • 1/2 cup of light shredded cheese (I like using Mozzarella)
  • 1/2 teaspoon of parsley

Instructions |

Preheat oven to 350. In a skillet (preferably oven safe as it’s easier to keep things to one pan) warm oil and saute onions and garlic until tender. Add chickpeas, tomato sauce, onion powder, garlic powder, paprika, salt and pepper and mix. Bring to a bubble and crack 4 eggs into each corner of the pan.  If you did not use an oven safe skillet, simply transfer to an oven safe dish before cracking eggs on top. Sprinkle with cheese and parsley and place in oven for about 20 minutes, or until eggs are cooked to your liking and cheese is melted. Spoon onto a plate and serve with a hunk of fresh bread for dipping if desired.
