I love chickpeas…or garbanzo beans…or whatever you want to call them – I love them all the same. I love bean burgers because they provide a great way to combine all of those delicious flavors like ketchup, dill pickles, tomato, and onions, with a lot less fat than conventional beef burgers. Bonus: loads of healthy fiber too! My beloved chickpeas make awesome bean burgers when combined with a few other ingredients.
You can get creative and really play with the flavors and you can even keep as simple as a few shakes of salt and pepper.
If you give them a try, comment below and let me know what you think!
- 1 15-oz. can of chickpeas, drained, well rinsed and pat dry
- 1 large chopped carrot, coarsely chopped
- 1/2 medium onion, chopped
- 2 cloves garlic, chopped
1 cup breadcrumbs (I used seasoned panko style breadcrumbs)
2 teaspoon of ground cumin
1 teaspoon of ground smoked paprika
1 teaspoon of dried parsley
1/4 teaspoon of salt
Pinch or two of black pepper
Preheat the oven to 350. Line a baking sheet with parchment or a silicone baking sheet.
In a food processor, add chickpeas, carrot, onion, garlic and egg. Pulse ingredients until it forms a chunky paste.
Transfer mixture into a bowl and add breadcrumbs and seasonings and mix well to combine. Divide mixture into four equal parts and using hands, form into four patties. Line patties on the baking sheet and bake in the oven for 20-25 minutes until they begin to turn a light golden brown.
Serve in a pita or wrap with all of your favorite burger fixings!
