Banana Strawberry Oat Muffins – flavorful, light and portable!

I love a good muffin. Especially one that is tasty, light and completely portable. With banana flavor and a little strawberry jam surprise in the middle, these muffins are a perfect sweet treat. Have one with a hardboiled egg and some fruit for breakfast or keep a few in the freezer and thaw for a treat with tea or coffee.

Ingredients |

  • 3/4 cup mashed ripe banana (for me, two large bananas did the trick)
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of plain nonfat yogurt
  • 1 & 1/2 cups of flour
  • 3/4 teaspoon of baking powder
  • 1/4 cup of strawberry preserves
  • 3 tablespoons of instant oats

Instructions |

Preheat the oven to 350 degrees. Spray a muffin pan with nonstick spray (I like coconut spray).

In a mixing bowl, whisk eggs and add banana, sugar, vanilla extract, and yogurt and whisk together. Sift in flour and baking powder and mix until combined.

Scoop a heaped tablespoon of batter into each muffin cup. Drop about a teaspoon of strawberry preserves on top of the batter in each muffin cup. Add another heaped tablespoon of batter on top of the preserves to cover it completely. Sprinkle a few pinches of oats over the top of each muffin.

Bake in the oven for about 16-18 minutes and allow to cool completely before enjoying.
