Oatmeal Raisin Cookie Muffins

Oatmeal Raisin Cookie Muffins combine warm cinnamon, sweet raisins and creamy cream cheese frosting into a delicious treat for only 160 calories!

I love oatmeal raisin cookies! The truth about cookies is that you eat them quickly and they’re gone. The best cookies usually have a good amount of butter, sugar and flour in them and can pack a heavy calorie and fat punch in just a few small bites. I wanted to make something that combined all of the delicious flavors of oatmeal raisin cookies, with a few more bites so I decided to make them into muffins!

These muffins are a really lovely fall treat. The warm cinnamon, sweet raisins and creamy cream cheese frosting combine into a muffin that everyone will gobble up!

Ingredients |

For muffins:

  • 1 can of no salt added/low sodium garbanzo beans/chickpeas, very well rinsed and drained
  • 1/2 cup of reduced fat milk
  • 1/2 cup of raisins
  • 1 large egg
  • 2 tablespoons of unsalted butter, softened (I used Kerrygold grass fed Irish butter)
  • 1/2 cup of light brown sugar, packed
  • 1 teaspoon of vanilla extract
  • 1 cup of oat flour (I used Bob’s Red Mill whole grain oat flour)
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of baking powder
  • Pinch of salt

For topping:

  • 2 tablespoons of reduced fat cream cheese (I used Cabot Neufchatel cheese)
  • 1/4 cup of confectioners sugar
  • 1/8 teaspoon of vanilla extract
  • 1 teaspoon of warm water
  • 2 tablespoons of raisins, finely chopped
  • 2 tablespoons of walnuts, finely chopped

Preheat the oven to 350 degrees. Spray a muffin pan with nonstick cooking spray and set aside.

In a blender, combine very well rinsed, drained and dry chickpeas with milk and raisins and blend very well into a smooth paste. In a bowl, beat egg and whisk together with butter, brown sugar and vanilla extract. Add blended paste to the bowl and whisk until well incorporated.

In another bowl combine flour with baking soda, baking powder, and salt.

Add dry ingredients to bowl and mix together to make batter.

Divide batter between 12 muffin cups. Bake in the oven for 15-17 minutes and allow to cool before frosting.

To make cream cheese frosting, combine softened cream cheese, confectioners sugar, water and vanilla and whisk until smooth.

Top each muffin with a little frosting and sprinkle each with a few chopped raisins and walnut pieces.
