Caldo Verde, Portuguese Kale Soup

Caldo Verde, which literally translates to “green broth or soup”,  is a traditional Portuguese soup that includes potatoes, greens (usually kale or collard greens), meat and olive oil.

This delicious soup is super simple and such a crowd pleaser, as a hearty meal or starter.

My version lightens things up by enhancing the existing flavor with seasonings and tomato paste and sauce and reducing the amount of pork fat and oil. I also use sweet potatoes rather than white potatoes in my version.

Ingredients |

  • 1 tablespoon of olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 2 quarts of chicken broth
  • 4 tablespoons of tomato paste
  • 1 cup of tomato sauce
  • 1 tablespoon of garlic powder
  • 1 tablespoon of sweet paprika
  • 2 large sweet potatoes, peeled and cut into 1-2 inch cubes
  • 1/2 pound of kale, thoroughly washed and finely chopped (I rough chop it sometimes, but the traditional way to make it is a fine chop)
  • 6-8 oz of fresh pork sausage, such as chorizo/chourico, linguica or kielbasa (I find mine in the deli section, 1 large link will do the trick)
  • 1 can of red kidney beans, rinsed and drained
  • Salt and pepper

Instructions |

In a large sauce pan, saute onions and garlic until tender.

Add broth, tomato paste, tomato sauce, tomato paste, tomato sauce, garlic powder and paprika and stir to combine. Add potatoes, cover and allow to reach a boil and cook for about 10 minutes.

Turn heat down to medium and add sausage slices and chopped kale. Cook covered for about 20 minutes. Uncover, add beans and additional salt and pepper to taste.

Allow to cool a bit before serving.
