
So quick and easy with just 5 ingredients! What I love most about this is its versatility. I can have a cup of it warm over brown rice, cold over salad, or put some in a wrap or flat with some cheese for a chicken fajita, quesadilla, or pizza.

- 6 boneless, skinless chicken thighs
- 1 1.25 oz. packet of fajita seasoning mix
- 1 14 oz. bag of frozen peppers and onions
- 4 tablespoons of tomato paste
- 1 tablespoon of corn starch
Instructions |
Set slow cooker to low. Place chicken, peppers and onions, tomato paste and fajita seasoning inside of cooker and mix well. Cover and allow to cook for 5 hours. After 5 hours, remove lid, break up chicken with fork and add corn starch and mix well. Switch slow cooker to high setting and cover. Allow to cook for another hour. Allow to cool a bit before serving. Store leftovers in covered container in the fridge for up to 4-5 days. Freezes beautifully.
Light Bites Done Right Tip! If you live a veggie lifestyle, this would be beautiful with black beans! Follow the exact same instructions but replace chicken with 2 15 oz. cans of drained and rinsed black beans and cook covered on low for two hours.
