Chocolate Peanut Butter Chip Brownies

There are loads of black bean brownie recipes and this is just my version from lots of trial and error. The peanut butter chips really add something special, especially if you love the combination of peanut butter and chocolate, but chocolate chips would work really well too!

Kids won’t know that these are a healthier version, they will gobble them up! The best part is that for just 100 calories and 2.6g of fat / 3 Weight Watchers PointsPlus per brownie, you can enjoy them too.

Ingredients |

  • 1 cup of flour (I use whole grain oat flour)
  • 2 tablespoons of unsweetened cocoa powder
  • 1 teaspoon of baking powder
  • ¼ cup of sugar and sweetener blend (I used Domino Light Stevia and Sugar blend)
  • 1 15.5 oz. can of black beans, drained and rinsed thoroughly
  • 1 egg
  • ½ cup of unsweetened apple sauce
  • ¼ cup of nonfat milk
  • 1 ½ teaspoon of vanilla extract
  • 2 teaspoons of light butter spread (I used Brummel and Brown)
  • 3 tablespoons of peanut butter chips, divided (I like to fold 2 tablespoons into the batter after I’ve blended together all the ingredients and then sprinkle the remaining tablespoon on top just before baking).

Light Bites Done Right Tip! Sweetness preference is very individual and these aren’t overly sweet brownies. One way you can test the level of sweetness is by mixing everything except the egg, having a little taste of the batter, and adding a few sweetener packets for more sweetness if desired before adding the egg in and blending everything together. This will not change the nutritional content of the brownies as listed, but will boost the sweetness if you have a real sweet tooth! 🙂

 Instructions | 

Preheat oven to 350. Spray an 8” square baking dish with nonstick spray (I use coconut spray).

In a blender or large food processor, blend beans and milk very well to a smooth paste. Add everything else but the chips and blend well. Fold in 2 tablespoons of chips and pour batter into dish. Sprinkle remaining chips on top before placing in the oven to bake for about 18-20 minutes. Remove and allow to cool completely before cutting and serving.
