I love quick and easy recipes. This is made all in one pot and under 15 minutes. It’s easy, nutritious and absolutely delicious!
I make this when I am short on time and it never disappoints. Simple and so colorful , I had to call it confetti!
Ingredients |
- 1/2 avocado (4pp)
- 8 large raw shrimp, deveined and peeled (1pp)
- 1/2 cup couscous (8pp)
- 1 cup assorted veggies chopped very finely (0pp)
- 1/2 cup plus 2 tbsp water
- Squeeze of lemon
- 2 tsp olive oil (2pp)
- 1/2 tsp garlic powder
- Salt & pepper to season
Instructions |
Spray a medium saucepan with cooking spray and add water over a low heat. Add couscous.
Spray steaming basket with cooking spray and place it on top of the couscous. Add the shrimp, evenly spaced and vegetables. Cover with a lid and allow to cook over a medium heat for about 5 minutes.
Turn the heat off and allow to cook for another 5 minutes or so. Remove the lid and steaming basket.
Fluff the couscous with a fork and add shrimp, veggies, oil, lemon juice, garlic powder, salt and pepper and toss.
Add half of a chopped avocado.
