Turkey Meatballs with Olive Sauce

One of my family’s favorites for dinner tonight – turkey meatballs that I prepare with olive sauce and serve with whole wheat spaghetti.

These would be yummy in a roll as a meatball sandwich or just on their own with sautéed vegetables or a big salad.

Ingredients |

For meatballs:

  • 1 pound of lean ground turkey
  • 1 small onion, chopped and sautéed
  • 2 tablespoons tomato paste
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons Italian mixed herbs
  • 1/2 teaspoon salt
  • A bit of pepper

For sauce:

  • 1 small onion, chopped
  • 2 teaspoon olive oil
  • 2 tablespoons balsamic vinegar
  • 3 garlic cloves, minced
  • 2 teaspoons Italian mixed herbs
  • 20 spanish olives
  • 4 tablespoons of olive brine (the salty water the olives are packed in)
  • 2 cans chopped tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons onion powder

Instructions |

In a large skillet coated with non-stick cooking spray, sauté two chopped onions for divided use (1/2 in sauce and 1/2 in meatballs). Set aside and allow to cool.

In a large mixing bowl, combine 1/2 of the sautéed onions with raw ground turkey, 2 tablespoons of tomato paste, egg, breadcrumbs, garlic powder, 2 teaspoons of mixed herbs, and salt and pepper. Form into 2″ meatballs and set aside.

Add 2 teaspoons of olive oil to a large skillet over a medium heat. Carefully place the meatballs in the skillet and allow to sear on all sides, flipping them after a few minutes. Place the meatballs on a plate to prepare sauce in the skillet.

Add balsamic vinegar to pan and sauté minced garlic for a minute before adding remaining sautéed onions, chopped tomatoes, tomato paste, olive brine, onion powder, mixed herbs and salt and pepper. Mix and allow to heat, add meatballs and cover to finish cooking meatballs for about 15 minutes.

Add olives and mix in before serving.

I serve mine with a 1/2 cup of cooked whole wheat spaghetti (87 cals, 2pp) and a slice of light garlic bread (85 cals, 2pp) for a really hearty meal.
